10 Easy Fall Recipes the Whole Family Will Love

There’s something about fall that makes us want to spend a little more time in the kitchen. Cooler evenings call for warm, comforting meals—but when you’re feeding a family, “cozy” shouldn’t have to mean complicated!

These 10 easy fall recipes are perfect for busy weeknights, lazy Sundays, or those evenings when everyone is hungry and you need dinner on the table fast. They use simple ingredients, are kid-friendly, and bring plenty of those classic fall flavors we love.

1. One-Pot Creamy Chicken and Rice

Why families love it: One pot means less cleanup!

Sauté bite-sized pieces of chicken with a little olive oil, then add diced carrots, onion and garlic. Stir in uncooked rice, chicken broth and your favorite seasonings. Cover and simmer until the rice is tender and the chicken is cooked through. Stir in a little cream cheese or heavy cream at the end for a creamy finish.

Easy shortcut: Use rotisserie chicken instead of cooking your own. Just add the shredded chicken near the end.

Kid-friendly tip: Let kids sprinkle shredded Parmesan cheese over their own bowls.

2. Easy Pumpkin Mac and Cheese

Pumpkin isn’t just for pie! Add a little pumpkin puree to homemade—or even boxed—mac and cheese for an easy fall twist.

Prepare your favorite mac and cheese and stir in about ½ cup of pumpkin puree. Add a little extra cheddar cheese and a pinch of garlic powder and paprika.

The pumpkin adds a subtle sweetness and makes the sauce extra creamy without making the dish taste like pumpkin pie.

Make it a meal: Stir in cooked chicken, broccoli or peas.

3. Slow Cooker Beef and Vegetable Soup

This is the ultimate “throw everything in the slow cooker” dinner.

Add cubed beef, potatoes, carrots, celery, onion and a can of diced tomatoes to your slow cooker. Pour in beef broth and season with garlic, Italian seasoning, salt and pepper.

Cook on low for 7–8 hours or high for 4–5 hours, until the beef is tender and the vegetables are cooked.

Easy shortcut: Buy pre-cut stew meat and baby carrots so there’s almost no chopping involved.

Serve with crusty bread for dipping.

4. Sheet-Pan Sausage, Apples and Sweet Potatoes

Sweet and savory come together in this super-simple dinner.

Cut smoked sausage, sweet potatoes and apples into bite-sized pieces. Toss everything with olive oil, salt, pepper and a little cinnamon. Spread it on a sheet pan and roast at 425°F for about 25–30 minutes, stirring once halfway through.

The apples caramelize as they cook, making this a surprisingly kid-friendly combination.

Try it with: Chicken sausage, turkey sausage or your family’s favorite smoked sausage.

5. Easy Chicken Pot Pie Casserole

You don’t need to make homemade pie crust to enjoy chicken pot pie!

Mix shredded rotisserie chicken with frozen mixed vegetables and a can of cream of chicken soup. Spread the mixture into a baking dish and top with refrigerated biscuit dough.

Bake according to the biscuit package directions, or until the filling is bubbling and the biscuits are golden brown.

Time-saving tip: Use frozen vegetables and rotisserie chicken for a dinner that comes together in about 10 minutes before it goes into the oven.

6. Taco Soup

If your family loves taco night, they’ll probably love taco soup!

Brown a pound of ground beef or turkey in a large pot. Add a can of diced tomatoes, a can of corn, a can of black beans, a can of kidney or pinto beans and a packet of taco seasoning. Add enough beef or chicken broth to reach your preferred consistency.

Simmer for about 20 minutes.

Top each bowl with shredded cheese, sour cream, avocado or crushed tortilla chips.

Make it kid-friendly: Set out the toppings and let everyone build their own bowl.

7. Baked Apple Cinnamon Oatmeal

Fall isn’t just about dinner! This easy baked oatmeal makes a great breakfast for busy mornings.

Combine old-fashioned oats, milk, eggs, diced apples, maple syrup, cinnamon and a little vanilla. Pour into a greased baking dish and bake at 350°F for about 35–40 minutes.

Make it ahead of time and reheat individual portions throughout the week.

Fun addition: Let the kids add their own toppings—banana slices, berries, chopped nuts or a drizzle of maple syrup.

8. BBQ Chicken Stuffed Sweet Potatoes

Sweet potatoes are inexpensive, filling and packed with nutrients—and they make the perfect base for an easy family dinner.

Bake sweet potatoes until tender. Split them open and fill them with shredded rotisserie chicken tossed with your favorite barbecue sauce.

Top with shredded cheddar cheese and a little green onion.

Shortcut: Microwave the sweet potatoes first to cut down on cooking time, then finish them in the oven for a few minutes.

9. Creamy Tomato Tortellini Soup

This cozy soup tastes like you spent all afternoon cooking, but it comes together quickly.

Combine tomato soup, chicken or vegetable broth and a little cream in a large pot. Bring to a simmer and add refrigerated or frozen cheese tortellini. Cook according to the package directions.

Stir in a handful of spinach at the end if you’d like to add some greens.

Serve with grilled cheese sandwiches for the ultimate fall comfort-food dinner.

Kid-friendly tip: The cheese-filled tortellini makes this soup especially appealing to picky eaters.

10. Cinnamon Sugar Apple Roll-Ups

Need an easy fall dessert? These little apple roll-ups are a family favorite.

Flatten slices of sandwich bread with a rolling pin. Spread with a little softened butter, add thinly sliced apples, then roll them up. Brush with melted butter and sprinkle with cinnamon sugar.

Bake at 375°F for about 12–15 minutes, until golden brown.

Serve warm on their own or with a scoop of vanilla ice cream.

Fun idea: Have the kids help roll and sprinkle the treats before they go into the oven.

Make Fall Cooking Easier

Fall family meals don’t have to involve complicated recipes or a long list of ingredients. Keep a few shortcuts on hand—rotisserie chicken, frozen vegetables, refrigerated dough, canned beans and pre-cut produce—and you’ll always have the makings of an easy dinner.

And don’t forget to make it fun! Let the kids choose toppings, help stir, assemble their own plates or pick which recipe the family tries next.

Because the best part of fall cooking isn’t necessarily what’s on the plate—it’s getting everyone around the table together.
